Distilled in Portland, Oregon, it pioneered the "American" or "New Western" style of gin — meaning the juniper takes a back seat and lets the other botanicals actually show up to the party. Cardamom, coriander, lavender, anise, sarsaparilla, and two kinds of orange peel come together into something smoother and more cocktail-friendly than your classic London Dry.
Bottled at 42% ABV, it's named after the Aviation cocktail — a Prohibition-era gin drink that fell out of fashion right around the time bad gin took over. This 50ml mini is a low-commitment way to find out what gin can actually taste like when it stops trying to taste like a Christmas tree.
